verse freely with the critic.

clines your invitation, he or
she feels good thinking you
respect their opinion
enough to ask them to sam-
ple your item prior to intro-
ducing it to the public. This
is your first step in forming
a working relationship with
the critic. But remember,
nothing will ever happen
unless you take the initia-
tive to make it happen.
"Let's say that your
restaurant was just re-
viewed and the critic im-
plies in his article that
you use a poor or below-
average grade of beef; or
that your clam chowder
has an unusual taste; or
perhaps the review says
that a particular sauce is

"With a great deal of dip-
lomacy, write a letter to the
editor of the newspaper the
critic works for and ask that
it be printed in response to
the review.
"If the critic has implied
that you use a below-
average grade of meat,
submit a copy of your meat
purveyor's invoice showing
that in fact you do purchase
a choice or prime grade
product. State in your letter
that you are purchasing the
choice or prime grade.
"If the reviewer remarks
that your clam chowder has
a 'strange' taste to it, then
list in your letter all of the
ingredients and let the pub-
lic judge for themselves if
the chowder sounds good.
"Newspapers are ob-
liged to print letters to
editors that clarify or re-
spond to subjects their
people report on. Take
advantage of this free
publicity and at the same
time tell your customers
what is really going on in
your restaurant.
"All that I have written
up to now deals with one in-
dividual, the restaurant cri-
tic. But what about the
hundreds of critics that visit
your restaurant every week
— the customers? How sure
are you that every customer
who leaves your restaurant
is planning to return?
"The only safeguard
against the restaurant cri-
tic and the critical customer
is to stay close to all phases
of your operation and never
rest on your laurels. Nega-
tive remarks spread by
word of mouth from dis-
satisfied customers will
cripple you, and the restau-
rant critic just might come
along shortly to drive the
last nail into your coffin."
'Oscar' Winners
LOS ANGELES — Dus-
tin Hoffman and Meryl
Streep won • Academy
Awards Monday evening for
their portrayals in the title
roles of "Kramer vs.
Kramer."
Hoffman was voted best
actor of 1979 and Miss
Streep, from a Jewish fam-
ily of diamond merchants,
was named best supporting
actress.
Melvyn Douglas was
named best supporting
actor for his role in "Being
There."
Kaufman-Hart
Play Will Open
"You Can't Take It With
You," by George S. Kauf-
man and Moss Hart, will
open at the Meadow Brook
Theater 8:30 p.m. Thurs-
day. The play will run
through May 25.
