An interesting gourmet
kosher cookbook, "Not
Chopped Liver," by Dorothy
Seaman and Paula Smith
has more than 500 kosher
gourmet dishes. All of the
recipes can be used with
each other by the kbsher
homemaker, since they are
either pareve or meat.
There are substitutions of
kosher meats for non-
kosher ones that are tradi-
tionally thought of as being
"gourmet." The 338-page
book can be a good aid in
making kosher entertain-
ing more fun. The book is
available at book stores and
is also available at a special
rate to organizations. For
information, write to Jet-
sand Press, Box 17052,
West Hartford, Conn.,
06117. Below is a sample re-
cipe from the book.
11/2 lbs. shoulder of veal, cut
thin and pounded
1/2 lb. mushrooms, minced
1 tbsp. margarine
1 tbsp. flour
1/2 cup liquid non-dairy
creamer
1/4 tsp. salt
1/4 tsp. white pepper
flour
3 tbsps. margarine
1/4 cup dry vermouth
1/2 cup sherry
1/2 cup chicken broth
Saute mushrooms in 1 tbsp.
margarine until mushrooms
are soft. Add flour and stir well.
Add non-dairy creamer, salt
and pepper. Continue to cook
until thick. Set aside. Spread
some of the mushroom mix-
ture on each veal slice. Roll
and tie securely. Sprinkle with
flour and saute in margarine
until brown. Place in a baking
dish. Combine vermouth,
sherry and chicken broth.
Bring to a boil and reduce to
one half. Pour sauce over veal.
Bake in a 350-degree oven for
20 minutes. Serves 4.
