Below is a sample re- cipe from the book. 11/2 lbs. shoulder of veal, cut thin and pounded 1/2 lb. mushrooms, minced 1 tbsp. margarine 1 tbsp. flour 1/2 cup liquid non-dairy creamer 1/4 tsp. salt 1/4 tsp. white pepper flour 3 tbsps. margarine 1/4 cup dry vermouth 1/2 cup sherry 1/2 cup chicken broth Saute mushrooms in 1 tbsp. margarine until mushrooms are soft. Add flour and stir well. Add non-dairy creamer, salt and pepper. Continue to cook until thick. Set aside. Spread some of the mushroom mix- ture on each veal slice. Roll and tie securely. Sprinkle with flour and saute in margarine until brown. Place in a baking dish. Combine vermouth, sherry and chicken broth. Bring to a boil and reduce to one half. Pour sauce over veal.
