MAIL DEPT. . . . from
Leonard W. Moss, profes-
sor, Department of Anthro-
pology, Wayne State. Uni-
versity . . . "Not all native
Italians eat pasta at every
meal. Large numbers of It-
alians don't eat it at all. Ex-
cluding idiosyncratic varia-
tions of diet, there are vast
regional differences evident
in Italy. Southern and Cen-
tral Italians are the big con-
sumers of pasta. The Mil-
anese, Torinese, and
Venetians are big rice buffs.
Throughout the Po Valley,
people consume vast quanti-
ties of polenta (mammaliga-
corn meal). Up in the Alpine
reaches, potatoes are the
staple of diet.
"The word restaurants
did not enter the vocabulary
— with its present meaning
— until 1765. A certain ven-
dor of soup, Boulanger,
opened a shop on the Rue
Bailleul (Paris) and in-
scribed on his sign: Boulan-
ger sells magical restora-
tives.
(Vede:
Prosper
Montagne, `Larpusse Gas-
tronomique.' Crown Pub-
lishers, p. 806)."

Spitz Joins ABC's
Olympic Coverage
LOS ANGELES — Mark
Spitz, the winner of seven
gold medals for swimming•
in the 1972. Olympics, who
never quite made the money
or the name his agents pre-
dicted, will try for a come-
back as a swimming com-
mentator on ABC's coverage
of the 1976 Olympics.
While hoping to do well as
a commentator he admits
that if he is not successful it
will probably mark an end
to his career in the public
eye.
Said Spitz, "I'm just
happy ABC is giving me an
opportunity to make a
comeback. I think I can lend
my expertise to the Olym-
pics coverage because I
know what it's like to be a
swimmer."
