NEW YORK — Pioneer Women
announced this week the start of
a new course for girls of pre-Army
age in instrumental mechanics
and electronics. These courses are
being conducted in cooperation
with the Israel defense forces and
the ministry of labor, it was an-
nounced by the vocational train-

DANISH SANDWICHES
In a quaint pavilion overlooking
a small lake in Copenhagen there
is a restaurant that is world fa-
mous for its smorgasbord sand-
wiches. It is managed by a young
Jewish man, Adam Siesbye, who
married the great-granddaughter
of the founder of the business. The
name of the restaurant is Oskar
Davidsen.
The sandwich list, which is giv-
en to every guest, is four feet
long. It lists 178 sandwiches that
can be served on four kinds of
bread (rye, white, sour and crisp)
which brings the total number to
over 500! The list is printed in
English and Danish and also
serves as the order form for the
kitchen.
We learned that the Danish
sandwich—or the SiMORREBROD
as they call it, is a piece of art.
You start with a small and thin
square slice of bread. Then you
spread it generously with butter
or chicken fat, as the case may be.
And then "there is absolutely
nothing edible which cannot be
used for smorrebrod.” Fish, meat,
vegetables and eggs are the ma-
jor ingredients. The sandwiches
are usually cold and light, and
lend themselves to a summer
lunch.
From the long list we chose
number 137—parboiled egg with
remoulade, and this gives us a
chance to show how basic in-
gredients can taste and look com-
pletely different.

PARBOILED EGG SANDWICH
WITH REMOULADE
for four sandwiches:
4 parboiled eggs
4 slices of bread
Remoulade sauce
1. Parboiled eggs:
The term parboiled describes the
state of the egg half-way between soft.
and hard boiled. Boil the eggs 6-7 min-
utes and coll under running water.
Peel. The eggs will have firm white
and the yolk will be set, but moist.
Z. Remoulade:
1 cup stiff mayonnaise
1 tbls. prepared mustard
1 tbls. pickled capers
1/2 medium pickle, chopped very fine
1 tbls. snipped parsley
1 tsp. tarragon
Mix all • the above listed ingredients.
3. To assemble the sandwich:
Spread the bread generously with
remoulade sauce. Slice the parboiled
eggs with a sharp knife. Arrange the
slices on the bread. Garnish with more
remoulade, parsley and pickles.
