The economic situation was low,
but the spirit was high, as always.

Fish fillet was on our table day in
and day out. Our mothers tried to
make it more interesting and tasty.
So, out of the frozen "fillet" they
came up with dishes like "fish gou-
lash" "fish shnitzel," "fish crou-
quettes," "gefilte fish"—you name
it. And we loved them all.
As we, and the state, came of
age, we discovered to our surprise "
that "fish fillet" is a fine food by I
its own right, not just a substitute
I
for beef or chicken. Now we love
"fish fillet" because of its delicate
flavor, and because it helps us with
our efforts to stay slim.

1. Place fish fillets in a shallow baking
dish or ovenproof platter. Dot with
butter and sprinkle with lemon juice,
salt and pepper.
2. Place in broiler about 3 to 4 inches
from heat and broil from 8 to 10
minutes.
3. Whle the fish Is in the broiler pre-
pare a cheese sauce. Put the milk
and the cheese in the top of a double
boiler over simmering water. Cook,
stirring constantly until cheese melts
and the sauce is blended. Add the
mustard.
4. Pour the sauce over fish.. Put under
broiler for 2 minutes, until it browns.
Serve immediately.
2-3 servings.
