5 potatoes grated
1 onion grated
2 eggs
1 teaspoon salt
3 tablespoons matzo meal or flour
Vegetable oil for frying
Beat eggs well, add rest of ingredients.
Heat oil, drop ingredients in large
spoonfuls into hot oil, fry until brown
on both sides. Keep warm until all
Latkes are done. Serve.
Hanuka Cookies (Basic Recipe)
1/2 lb. margarine
1 cup sugar
2 eggs
21/2 cups flour
1/2 teaspoon baking powder
1 teaspoon vanilla
Cream margarine and sugar until
fluffy. Beat in eggs one at a time, beat-
ing well after each addition, add va-
nilla, beat again, add flour sifted to-
gether with baking Powder. Refrigerate
overnight. Next day roll a part very
thin and cut with cooky cutter Into
desired shapes. Decorate as desired.
Roll out next piece of dough and do
likewise. Bake in 375 degree oven on
ungreased cooky sheet for 8 to 10
minutes. Makes about 48 cookies.

One cannot think of Hanuka
without potato pancakes—although
the reverse is no longer true —
one can relish pancakes all the year
round. How ancient is the custom
of eating potato pancakes on this
particular holiday? A literary
weekly recently published a car-
toon showing several archaeolo-
gists trying to decipher the almost
obliterated text of a recently-dis-
covered 2,000-year old scroll in the
hills of Judea. "I have it," finally
exclaims one learned servant, "it
is a recipe for potato latkes." This,
to be sure, was only a joke. To
begin With, the potato was un-
known in ancient Palestine as it
was indigenous to Peru, where the
Spanish conquistadores first dis-
covered it in the early 16th Cen-
tury, and later it was spread to
Europe.] Some claim Sir Walter
Raleigh and others claim Sir Fran-
cis Drake as its harbinger.
To be sure the ancient Israelites
did celebrate Hanuka by the con- !
sumption of lathes probably made
with a regional type of tuber and I
fried oil to symbolize the miracle
of the oil lamps in the Temple
when Judas Maccabeus defeated
