Borsht
1 large can tomatoes
3 quarts water
3 bunches of beets
1 bunch scallions or 1 large onion
juice 1 lemon
salt and pepper to taste
2 eggs
sugar to taste
1 cup sour cream
Grate beets on large grater, cut scal-
lions into small pieces, or 1 large onion
minced. Bring to a boil tomatoes, water,
grated beets, scallions, lemon juice,
salt, pepper and sugar, then simmer
gently about forty-five minutes or until
beets soft. Remove borsht from fire.
Beat eggs well and while borsht hot,
gradually add 1 cup of borsht, stirring
all the time, then add rest of borsht
stirring well. Serve hot or cold topped
with 1 tablespoon sour cream.

2 tomatoes or small can tomatoe puree
or tomato sauce
1 /4 cup parsley
salt and pepper to taste
10-12 cups water
Soak beans overnight in water to
cover. Next bring to boil beans in
fresh water and drain. Add all above
ingredients to beans first browning
onions and garlic in 3 tablespoons but-
ter (or fat, if fleishig) and simmer about
three hours or until beans tender. Re-
move from fire and put thru a strainer
or sieve, smashing ingredients. Reheat
and serve.
