Bring to a boil tomatoes, water, grated beets, scallions, lemon juice, salt, pepper and sugar, then simmer gently about forty-five minutes or until beets soft. Remove borsht from fire. Beat eggs well and while borsht hot, gradually add 1 cup of borsht, stirring all the time, then add rest of borsht stirring well.
