CHARLOTTE HYAMS

Miss Charlotte Hyams this
week was designated City Edi-
tor of The Jewish News. She
succeeeds Harvey Zuckerberg,
who has accepted a public rela-
tions assignment in Chicago.
Miss Hyams, a Wayne State
University graduate, is a former
Jewish News editorial assistant.
She has held the post of edi-
torial director of the WSU Daily
Collegian and she comes to The
Jewish News from the Pontiac
Press, where she was assistant
telegraph editor and copy edi-
tor.
She has pursued studies at
the United Hebrew Schools'
Midrasha, the College of Jewish
Studies.
Miss Hyams was the first
woman graduate to receive
the Malcolm Bingay Memo.

ly to an outstanding Wayne
State journalism major.
Other awards earned by Miss
Hyams include the Sigma Delta
Chi (SDX) national journalistic
society scholarship key; SDX,
Detroit Chapter, certificate for
feature writing; Lucy Corbett

Sigma Phi women's journalistic
society; Ralph Holmes journal-
ism scholarship; and Standard
Club scholarship.
While a student at Cooley
High School, Miss Hyams won
the Donal Hamilton Haines
Award, first prize in the annual
Michigan Press Association'
speech reporting contest.
Her late father, Lewis G.
Hyams, was a newspaper editor
in Detroit and Canada.

CHICKEN WITH OLIVES
1 choice 3 1,-.1b. fowl, cut up; 1 cup
green
sliced, fresh mushrooms;
pepper, cut into strips; 1 medium
onion, sliced; 1 medium clove gar-
cup green olives
lic, minced;
stuffed with pimento; 12 cup pitted
ripe olives: 1 101/2-oz. can kosher
mushroom and tomato sauce.
Select a meaty fowl with just a
little fat on it. Remove the fat and
melt enough of it in a heavy 4-
quart saucepan to make 4 table-
spoons. Over medium heat brown
the pieces of the chicken in this
fat. Brown the neck, gizzard (pup-
ick), and heart as well. Add the
mushrooms, green pepper, onion
and garlic. Stir for 5 minutes. Slice
both the green and ripe olives and
add them, together with the tomato
mushroom sauce and the water.
Cover the saucepan tightly, bring
to a boil, then simmer until the
chicken is tender. The time will
vary with the tenderness of the
fowl, but allow about hours.
Taste and add salt if desired. Usual-
ly enough is provided by the
olives for the average taste. This
amount serves 5 to 6 generously.
FOWL WITH WINE
1 cut-up choice 3 1,/o-1b. fowl (evis-
cerated weight); 2 tablespoons oil
(vegetable or olive); 1 tablespoon
brandy; 1 8-oz. can -tomato sauce;
V2 cup cooking Sherry; cup
water; salt and pepper to taste.
Select a meaty fowl with very
little fat. Dry the pieces well on
paper towels. Heat the oil in a
heavy 4-quart saucepan, and in it,
over medium heat, brown the pieces
of chicken and the neck, gizzard
(pupick) and heart. Sp o o n the
brandy over the chicken and cook
for 2 minutes. Add the remaining
ingredients, bring to a boil, then
cover the pan, and simmer until
the fowl is tender. The time will
vary, but allow about 2 hours as
the wine helps to tenderize the
bird. This dish is best when made
in advance, chilled, and any fat
removed from the top. Serve with
rice or mashed potatoes. This
amount makes 5 to 6 portions.
