The time will vary with the tenderness of the fowl, but allow about hours. Taste and add salt if desired. Usual- ly enough is provided by the olives for the average taste. This amount serves 5 to 6 generously. Heat the oil in a heavy 4-quart saucepan, and in it, over medium heat, brown the pieces of chicken and the neck, gizzard (pupick) and heart. Sp o o n the brandy over the chicken and cook for 2 minutes. Add the remaining ingredients, bring to a boil, then cover the pan, and simmer until the fowl is tender. The time will vary, but allow about 2 hours as the wine helps to tenderize the bird. This dish is best when made in advance, chilled, and any fat removed from the top.
