Clnnamon-Ral In Coffee Cak
1 3/4 cups flour
1/2 teaspoon �aking power
1/4 teaspoon sail
1 cup sugar, divided
1/4 cup raisin
1 teaspoon ground cinnamon.
1/4 cup (1/2 stick) margarine,
softened
1 egg
2 egg whites
1/2 teaspoon vanilla
! container (8 ounces) light
sour cream
1 teaspoon baking soda
Light sour cream. glaze
(recipe follows)
Heat oven to 350 F. Mix flour,
baking powder and salt; set ide.
Mix 1/4 cup of the sugar with raisins
and cinnamon; set aside.
Beat margarine and remaining 3/4
cup sugar in large bowl until light and

In small bowl, combine flour,baking powder and cinnamon; set aside. In
large bowl of electric mixer, beat butter and sugar until light and fluffy; beat
in egg and vanilla extract. On low peed. gradually beat in flour mixture until
combined. Divide dough in half; shape each half into a thick disk; cover with
plaStic wrap. Refrigerate until finn, one to two hours. Preheat oven to 37SF.
• On lightly floured board or between two pieces of wax paper, roll one portion
into a 12x8-inch rectangle; cut into 2,Q-inch squares, Place 1 Vl inches apart
on ungreased baking sheets. Bake until just golden, eight to 10 minutes; cool
on baking sheets for one minute. Remove cookies to wire racks; cool
completely. Repeat with remaining dough. Frost with Creamy Frosting
(recipe follows) and pipe on decorating icinp to form ribbons. Makes four
dozen cookies. .
CREAMY FROSTING

In a small bowl, combine sugar, vanilla and salt. Stir in half-and-half, one

Chocolate Glaze·
Preheat oven to 3SOF. In large bowl of electric mixer, beat butter, ugar,
vanilla extract and salt until light and fluffy. Blend in flour until combined.
Using half-teaspoons of dough, shape into l' .. -inch balls. Place·two inches,
apart on ungreased baking sheets, Dip the bottom of a glass in flour, thel!l
gently press each 'ball to flatten. Bake until lightly browned, five to seven
minutes; remove from baking eets to wire rack to cool completely. Place
� teaspoon preserves on the bottom 'de of a cookie; cover it with another
cookie top side up to make a sandwich; repeat with remaining cookies. Place
ndwiches on a wire rack placed over a sheet of waxed paper. U ing a small
spoon, drizzle with Chocolate Glaze (recipe follow). Yield: four dozen
