1 can (16 oz.) sliced peaches
1 teaspoon cornstarch
Y. teaspoon cinnamon

per pound. Drain syrup from peaches; reserve. Com
bine cornstarch and cinnamon in small saucepan;
gradually stir in peach syrup. Bring to a boil and boil 1
minute, stirring constantly.
Add peach slices and continue coo ing until peaches
are heated through. Brush warm peach glaze over ham
20 minutes before end of cooking' time. When ham is
removed from oven, arrange S peach slices in a pin
wheel to resemble a flower; use green onion stems to
form flower's stem and leaves. Serve ham ith re

2 por tenderloins (1 �-l Vl lbs.)
3 Tab espoons seasoned bread crumbs
1 T blespoon grated Parmesan cheese
1 teaspoon salt
y. teaspoon pepper
2 Tab espoons cooking fat
1 small onion, chopped
1 clove garlic, minced
2 cups cooked rice
2-3 Tablespoons water
Vl teaspoon rubbed sage
Cut each tenderloin crosswise into 6 slices approxi
mately 1 inch thick. Place each slice on its cut surface
and flatten with cleaver to Vl-inch thickness. Combine
crumbs, Parmesan cheese, salt and pepper; dredge pork
slices to coat. Panfry slowly in fat in large frying pan IS
to 20 minutes. Add 0 'on and garlic and continue cook
ing 10 minutes, turnlng occasionally. Remove slices to
warm platter. Add rice, water and sage, stirring to com
bine; heat. Serve rice with pork tenderloin slices.

cuit pastry with butter or
margarine as shortening.
Enriched self-rising flour
eliminates the need for
leavening and salt; it al
so provides the B-vita
mins. riboflavin, niacin
and thiamin - plus the minerals. iron and calcium.
Our basic recipe calls for yogurt in the custard
layer, a few slivered almonds for crunch and a glaze
of peach preserves for added flavor.
We suggest you partially bake two 8-inch crusts.
Freeze one to be filled on short notice; use the other.
You might serve this "dessert" - topped with your
favorite fruit - with morning coffee, tea or milk. ith
fresh fruit and yogurt. you have a cool dessert or a
nutritious breakfast.
PEACHY DESS RT PIZZA
(one 12-i ch or t 0 8-incb pie )
2 cup enriched elf-ri in, y, cup peach preser
flour 1 cup plain yo rt
� cup butter or margarine, 2 table poon bro n su af
oftened � cup chopped almond
� to 'h cup milk 4 to S cup liced peache •
In medium mixing bowl, cut butter into flour with
pastry blended or 2 knives until mixture resembles
coarse crumbs. Blend in enough milk to make a soft
dough. Turn dough onto a lightly floured surface and
knead gently 30 seconds. Roll dough ou to one 12-
inch or two s-Incb circles. Flute edges and prick
center of dough with fork. Bake in preheated 4000 F .
oven 7 to 8 minutes or unttl crust ju t begins to
brown. Heat preserves in small saucepan; brush half
the preserves over crust. Top with yogurt. Return to
400°F. oven and bake 15 to 18 minutes or until crust
is golden bro n. Remove from oven and cool about
10 minutes. Brush with remaining preserves. Slice in
edges and serve.
