Place each slice on its cut surface and flatten with cleaver to Vl-inch thickness. Combine crumbs, Parmesan cheese, salt and pepper; dredge pork slices to coat. Panfry slowly in fat in large frying pan IS to 20 minutes. Add 0 'on and garlic and continue cook­ ing 10 minutes, turnlng occasionally. Remove slices to warm platter.
