use center cut prime beef.”
Executive Chef and Partner
Michael Sauer is the driving force
behind what emerges from the
kitchen. The dishes are beautiful
and look like works of art. Chef
Michael has worked many venues,
including as executive chef for
Sheraton Hotels.
“He is a positive leader and
possesses a very jovial personali-
ty,” Flora says about Chef Michael.
“He and I are the senior executive
leadership in the building.”
Eddie V’s is owned by Darden
Corporation, which is the organi-
zation that also owns the Capital
Grille, Longhorn Steakhouse, the
Olive Garden, Bahama Breeze and
others.
“We have what we call an indul-
gence culture here,” Flora said.
“We want to go above and beyond
our guests’ expectations. We get
to know their names; we take
notes on their drink and menu
preferences, and if they are here
for an occasion, we try to person-
alize the dining experience. One
of my goals is to make it seam-
less.”
They collect and track small
pieces of information about each
guest in order to optimize the
dining experience.
“If we have a couple who men-
tion they love a particular table,
we note that and we will try to
get them seated at that table
every time perhaps without them
having to ask. We call it being
obsessed with fulfilling their
unexpressed wishes,” Flora added.
Eddie V’s is open for dinner
only, and while there is no dress
code and management wants
everyone to feel comfortable,
the fine dining and lounge atmo-
sphere lends itself to more busi-
ness casual or dressy attire.
Word is getting out about the
jazz music at the new Eddie V’s,
and those who love the lounge
scene and love jazz are beginning
to assemble here.
“We have some space in front
of the piano, and when people are
feeling the energy, they get up and
dance,” Flora said.
The community response to
Eddie V’s has been excellent, he
said. “I have an obsessive atten-
tion to detail and I want everyone
to feel comfortable, well taken
care of and for this to become
their place. I want this to be
classy, elegant and fun.” •
