I

love the holiday season. I'm a social butterfly; attending
intimate gatherings, work events, cocktail parties or
grand soirees is exactly what I like to do. And, by far,
appetizers and hors d'oeuvres are my favorite part of any
meal.
The different flavor combinations, the sassy or sweet
sauces that accompany the tidbits and the extremes in tex-
ture (crunchy, silky, chewy and soft) are right up my alley.
In fact, I almost always say that the appetizers are better
than the main dish.



SMOKED WHITEFISH
MOUSSE
When I visit Northern Michigan, I can't
help but think "smoked whitefish" when I'm
there. This is a great use of the stuff.
1 envelope unflavored gelatin
1 Tbsp. cold water
% cup sour cream or mayonnaise
1 Tbsp. Worcestershire sauce
1 /2 tsp. ground black pepper
1 tsp. hot red pepper sauce, such as
Tabasco
1 /2 cup finely chopped red or Bermuda
onion
3 cups smoked whitefish
3 Tbsp. fresh minced dill
Garnish (optional):
lemon slices
sliced cucumber
mini bagel halves

Lightly spread vegetable oil on the inside
of a 3- to 4-cup fish-shaped or other mold.
Set aside.
Sprinkle the gelatin over water in a small
saucepan, and let it sit until the gelatin
is softened (about 2 minutes). Heat the
mixture over medium-low heat until the
gelatin is dissolved. Add half the sour cream
or mayonnaise, and stir until the mixture
is smooth. Add the remaining ingredients,
and stir well until the mixture is uniform in
texture.
Spread this mixture in the prepared
mold, and cover well with plastic wrap.
Chill for 6 hours or up to two days before
turning the mold over on a serving plate.
Garnish with lemon slices, sliced cucumber
and mini bagel halves if desired. Makes 12
or more servings.

BEEF AND LAMB PATTIES
WITH WARM ROASTED-
PEPPER SALSA
Salsa:
1 bell pepper, any color, chopped
1 cup chopped onion
1 tsp. minced garlic
2 plum tomatoes, chopped
kosher salt and pepper to taste
2 Tbsp. extra-virgin olive oil
juice of 1 lemon

Patties:
'/2 lb. lean ground beef
'/2 lb. lean ground lamb
1 cup finely chopped onion
1 cup breadcrumbs
2 large eggs
1 /4 cup fresh minced parsley
(or 1 Tbsp. dried)
1 4 cup pine nuts or slivered almonds
1 tsp. kosher salt
'/2 tsp. fresh ground pepper

Make salsa: Preheat oven to 400 degrees.
Spray a baking dish with nonstick cooking
spray. Set aside.
Place the bell pepper, onion, garlic and
tomatoes in a medium bowl. Season with
salt and pepper, toss with the olive oil and
transfer to the baking dish. Roast, uncov-
ered, for 20 minutes. Set aside to cool (do
not turn off oven). Transfer the mixture to
a small bowl, and toss together with lemon
juice.
Meanwhile, combine all patty ingredients
in a large bowl and, using your hands, mash
together until uniform. Use wet hands to
divide the mixture into 16 pieces, and form
into flattened patties.
Spray a baking dish with nonstick
cooking spray. Arrange the patties in the
prepared pan, and roast, uncovered, for 20
minutes (do not overcook). Serve hot with
the salsa spooned over. Makes 16 patties.

OVEN EGGPLANT FRIES
WITH YOGURT MINT SAUCE
olive oil
1 cup breadcrumbs
1 cup Panko breadcrumbs
2 tsp. granulated garlic
1 tsp. salt
1 tsp. chili powder
i/2 tsp. freshly ground pepper
2 large egg whites
2 small eggplants (about 2 lbs.)
Sauce:
1 cup plain yogurt
3 Tbsp. fresh lemon juice
1/4 cup chopped fresh mint
2 Tbsp. fresh chopped dill
salt and pepper to taste

Preheat oven to 375 degrees. Line a
