Winfrey's favorites. I think my
recipe is easier and just as tasty
— super moist with the sweet-
ness of apples and raisins. Made
as big burgers or as sliders, they
are amazing.
A couple of salads and some
caramel brownies, and you've
got holiday eats that are just so
good you won't mind laboring
on Labor Day.

AMAZING RAISIN, PEACH
AND APPLE TURKEY
BURGERS
% cup chopped scallions
% cup finely chopped celery
4 cups Granny Smith apples, peeled
and diced
'4 cup canola oil
6 lbs. ground turkey breast
2 tsp. Tabasco chipotle pepper
sauce
'4 cup fresh lemon juice
1 tsp. grated lemon zest
11/2 cup chopped parsley
% cup peach preserves
% cup raisins
1 Tbsp. salt
1 Tbsp. pepper
Saute the scallions, celery and apples
in the canola oil until tender. Let cool.
Combine the sauteed ingredients with
the turkey, and add remaining ingredi-
ents. Makes 8-12 big burgers or 30-40
sliders. Serve with your favorite condi-
ments and good-quality buns.
TOASTED-COCONUT LIME
AND CASHEW SLAW
Salad:
1 cup shredded sweetened coconut
2 Tbsp. canola oil
12 cups (or more) shredded green
or Napa (Chinese) cabbage
11/2 cup chopped scallions, white
and green parts
1 red bell pepper, chopped
1 cup chopped fresh cilantro
1 cup roasted cashews (maybe salted)
Dressing:
'/4 cup fresh lime juice
2 Tbsp. canola oil
1 tsp. sugar
salt and pepper to taste
Toast coconut: Combine coconut and
oil in a small bowl, and toss well to
coat. Transfer to a large nonstick skillet
over medium-high heat, and saute the
coconut until well toasted and mostly
golden. Remove from heat to cool.

Prepare salad: Combine toasted coco-
nut with remaining salad ingredients, and
toss well. Combine dressing ingredients,
pour over salad and toss well. Adjust salt
and pepper to taste. Cover, and chill until
ready to serve. Toss again just before serv-
ing. May be made one day in advance.
Makes 6 or more servings.

DRIZZLED BROWNIES
2 cups semisweet or bittersweet
chocolate chips
'/2 cup butter or margarine
1 cup sugar
3 large eggs
'/2 tsp. salt
2 tsp. vanilla extract
% tsp. baking soda
1% cup flour
1 cup good-quality caramel sauce
1 Tbsp. flaked salt, such as Maldon

Monday, September 8 through Friday, September 12
Preheat oven to 350 degrees. Spray a
9- x 12-inch baking dish well with non-
stick cooking spray. Set aside.
Place butter and 1 cup of the chocolate
chips in a medium-sized microwave safe
bowl, and cook for 2 minutes. Stir to
combine. If the chocolate is not melted,
cook another 30 seconds and stir again.
Continue this process until the chocolate
is melted. Do not cook at intervals of
more than 30 seconds or the chocolate
could burn (2 minutes is usually enough).
Stir in the sugar until smooth. Stir in
the eggs, one at a time, until incorporated.
Stir in the salt, vanilla, baking soda and
flour until incorporated. Add the remain-
ing 1 cup of chocolate chips, and transfer
the mixture into the prepared pan.
Bake for 25 to 30 minutes. Don't over-
bake; the brownies will become dry.
Let cool completely before cutting into
squares. Drizzle the squares with cara-
mel sauce, and sprinkle with sea salt.
Chill until ready to eat (serve cold or
room temperature; if these are left in the
sun, the caramel will become too melted
and the brownies can be "messy") Makes
about 2 dozen brownies.
