And loving the foods associated with summer.
Salads are a must. A meal without fresh, cold
vegetables seems as if it's missing something. Whether
they're green, airy and just tossed with a simple vin-
aigrette or composed of a garden of fresh vegetables,
something cool and refreshing is always welcome at
any meal. The salad here is chopped and lettuce-free. A
simple dressing with lime and the unusual addition of
mustard seeds and sweet coconut brightens and sweet-
ens this salad.

1 tsp. kosher salt
Heat the oil in a small saucepan
over medium heat until hot. Add
mustard seeds, and cook until begin-
ning to "pop." Cover with a lid, and
cook until seeds finish popping.
Remove from the heat.
Combine remaining ingredients, and
toss gently. Add mustard seeds. Adjust
salt to taste. Makes 6 - 8 servings.
