SOUR CREAM
COFFEE CAKE
1 cup sugar
% cup (11/2 stick) butter, softened
2 tsp. vanilla extract
2 large eggs
1 cup sour cream
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
Filling
11/2 cup finely chopped pecans
1/2 cup brown sugar
2 tsp. ground cinnamon

Preheat oven to 350 degrees. Spray a tube pan (such as a
Bundt pan) well with nonstick cooking spray.
Combine sugar, butter and vanilla in a large bowl, and beat
with an electric mixer until very creamy. Add eggs, and beat
well. Add sour cream, and beat well.
Combine flour, baking powder and baking soda in another
bowl, and whisk well to combine. Add to the wet ingredients, a
little at a time, until incorporated. Transfer half the batter to the
prepared baking pan.
Combine filling ingredients in a medium bowl, and sprinkle
over the batter in the pan. Top with remaining batter, and
smooth the top.
Bake for about 1 hour, or until toothpick inserted near center
comes out clean. Remove from oven, and cool for 15 minutes.
Run a knife around the pan to loosen the cake. Invert onto a
serving plate, and cool completely. Makes 16 servings.
