Menu

havuot is a time of harvest. It is said that on the

day God gave Moses the Torah, Mount Sinai
miraculously bloomed in exultation.
Why do we traditionally eat dairy on Shavuot? One
explanation is that before the Torah, there were no laws
of kashrut. With the Torah, laws of preparation and
eating foods in particular combinations were handed
down. Because the Israelites were not prepared to eat
meat under the restrictions of the new laws, no meat was
served.

VEGETARIAN PASTITSIO
12 oz. white or whole wheat dried
pasta, such as macaroni, tubetti or penne
ground paprika (garnish)
Eggplant sauce:
2 Tbsp. olive oil
2 cups chopped onions
1 tsp. minced garlic
1 Tbsp. dried parsley flakes
1 1 /2 tsp. salt
1 tsp. dried oregano, crumbled
'/2 tsp. ground cinnamon
'A tsp. sugar
'4 tsp. black pepper
1 eggplant (about 11/2 lbs.), peeled and
cut into 1/2-inch cubes
1 can (28 oz.) crushed tomatoes
Cheese sauce:
2 Tbsp. butter
2 Tbsp. flour

2 cups milk
1 tsp. minced garlic
10 oz. feta cheese, crumbled
salt and pepper to taste
2 large eggs, lightly beaten

Preheat oven to 425 degrees.
Prepare the pasta: Cook pasta in a large
pot of boiling water until just al dente (do
not overcook). Drain well, and set aside.
Make eggplant sauce: Heat oil in the
pasta pot (do not clean) over medium-high
heat. Add onions, garlic, parsley flakes,
salt, oregano, cinnamon, sugar and pepper.
Cook, stirring frequently, for 5 minutes. Stir
in the eggplant and tomatoes, and bring to
a boil. Reduce heat, cover and cook, stirring
occasionally, for 20 minutes more. Adjust
salt and pepper to taste.
Cheese sauce: Melt butter in a large sauce-

pan over medium-high heat. Whisk in the
flour, and cook, whisking constantly, for
2 minutes. Whisk in milk and garlic, and
bring to a boil, whisking constantly. Reduce
heat to simmer, and whisk in the feta, add-
ing the salt and pepper to taste. Remove
from heat; cool 5 minutes. Whisk in eggs.
To assemble: Fold half the pasta into egg-
plant sauce and half into cheese sauce.
Spray a large baking dish with nonstick
cooking spray. Transfer eggplant pasta to the
pan. Top with cheese pasta. Sprinkle with
paprika, and bake for 30 minutes until hot
and bubbly. Serve hot. Makes 6-8 servings.

Place kale in a large bowl. Set aside.
Heat the oil in a large skillet over medi-
um-high heat. Stir in shallots, and saute for
3 minutes. Stir in the black beans, and cook
for 2 minutes more.
Add this hot mixture to the kale, and toss
well. Allow the salad to cool for 10 minutes.
Add remaining ingredients, and toss well.
Season to taste with salt and pepper, and
serve immediately or at room temperature.
Makes 6-8 servings.
