3 Tbsp. extra-virgin olive oil
3 Tbsp. fresh rosemary leaves
2 tsp. kosher salt
1 tsp. pumpkin pie spice
1 tsp. chili powder
'/2 tsp. fresh ground pepper
% tsp. ground cayenne pepper

Preheat oven to 425 degrees. Line
rimmed baking sheet with parch-

GARLIC-GINGER
CARROTS
2 lbs. peeled carrots, cut diago-
nally into'/2-inch slices
3 Tbsp. melted butter or olive oil
1 Tbsp. minced ginger
1 Tbsp. minced garlic
2 Tbsp. honey, any kind
kosher salt and pepper to taste
% cup fresh chopped parsley,
garnish
Preheat oven to 400 degrees. Spray
a large baking dish or disposable

aluminum pan well with nonstick
cooking spray.
Combine all ingredients except
parsley in a large bowl, and toss well
with your hands to coat with the
butter or oil and honey. Arrange the
ingredients in the baking dish.
Cover with foil, and cook for 30
minutes. Remove the foil, stir the
carrots and cook uncovered for 15
minutes more. Adjust salt and pepper
to taste, and serve sprinkled with the
parsley.
Makes 6-8 servings.

Peel the potatoes, and cut into
1-inch cubes. Transfer the potatoes to
a large bowl.
Combine the remaining ingredi-
ents in a medium bowl, and whisk
well. Pour the oil mixture into the
potatoes, and toss well with your
hands.
Spread the potatoes on the pre-
pared baking sheet in a single layer,
and bake for 30 minutes. Allow the
potatoes to cool for a few minutes.
Transfer to a serving dish, and serve.
Makes 6-8 servings.
