OLD-FASHIONED
NO-BEAN CHILI
This recipe for a traditional beef-based
chili can easily be made vegetarian with
a meaty taste (and therefore kosher to
accompany the cheesy potatoes). Use
soy-based veggie burgers (such as Boca
Burgers), thawed and crumbled, instead
of the beef, and vegetable broth or water,
instead of the beef broth. This is a great
chili to serve in bowls or over hot dogs,
garnished with lots of fresh chopped
onions and yellow mustard.
2 Tbsp. vegetable oil
2 cups chopped onions
1 Tbsp. minced garlic
3 lbs. ground chuck or other lean
ground beef
1 large bell pepper, any color,
chopped
3 Tbsp. chili powder
1 /2 tsp. ground cumin
1 tsp. sugar
1 /4 tsp. ground cayenne pepper (or
to taste)
2 Tbsp. dried parsley flakes
1 bay leaf
1 28-oz. can diced tomatoes with
liquid
1 can (6 oz.) tomato paste
2 cups (or one 15 oz. can) beef
broth
salt and pepper to taste
Heat oil in large pot on medium-high
heat. Add onions and garlic. Cook, stir-
ring occasionally, for 5 minutes. Add the
beef and cook, stirring occasionally, for
5 minutes more. Add remaining ingre-
dients, and bring to a boil. Reduce heat,
cover and cook for 1 hour. Remove
cover, and cook another hour until
thickened. Adjust seasonings to taste,
and serve. Makes 8 servings.
CHEESY SALSA
POTATOES
8 cups peeled, 1/2-inch diced
Idaho or Russet potatoes
2 cups shredded cheddar cheese
2 cups mild prepared salsa
Y2 cup finely chopped sweet or
Bermuda onion
1 cup milk
1 /2 cup sour cream
1 tsp. kosher salt
1 /2 teaspoon pepper
1 cup breadcrumbs
Heat oven to 350 degrees. Spray an
attractive 3-quart (about 9-by-13 inch-
es) baking dish with nonstick cooking
spray. Combine all ingredients, except
breadcrumbs, in a large bowl. Transfer
to the prepared baking dish. Bake for
30 minutes. Sprinkle breadcrumbs
over potatoes, and bake for 30 minutes
more or until cheese is melted and the
potatoes are tender. Makes 8 or more
servings.
CHOPPED VEGETABLE
SALAD
Salad:
8 cups chopped (cut into 1-inch
pieces) Romaine lettuce
1 red bell pepper, chopped
1 cup frozen corn, thawed
1 cup finely chopped scallions,
white and green parts
1 cup chopped, pitted Kalamata
olives
1 cup 1/2-inch diced seeded cucum-
ber (peeled or unpeeled)
1 /2 cup chopped fresh parsley
Y2 cup chopped fresh dill
salt and pepper to taste
Dressing:
1 /4 cup red wine vinegar
1 /4 cup fresh lime juice
1 /3 cup grapeseed or canola oil
Combine salad ingredients in a large
bowl. Set aside (or cover and chill for
several hours until ready to serve).
Combine dressing ingredients in a jar
with a tight-fitting lid, and shake well.
Add the dressing to the salad, and toss
well. Adjust salt and pepper to taste, and
toss well again. Makes 8 or more servings.
