ns Wen Dear Jim, A joint
study reported in late
2007 by the World Cancer
Research Fund (WCRF) and the
American Institute for Cancer
Research (AICR), found that the
scientific evidence linking red
meat (beef, pork, and lamb) to
colorectal cancer was "convinc-
ing." Consequently, an AICR
panel recommended that cooked
red meat consumption be limited
to 18 oz. per week and that pro-
cessed meats be avoided.
A later 2007 joint National
Institutes of Health (NIH)
and AARP study found in-
creased risk for colorectal,
lung, advanced prostate,
t 1-/ esophageal, liver, larynge-
al, bladder, and bone can-
cer with high consump-
tion of red meat and/or
processed meats. Other
studies have reported
that cooking/grilling
meat at high tem-
peratures may increase
certain cancer risks.

*Some begin Havdalah 60 minutes after sunset
instead of 72 (above).
I recommend avoiding pro-
cessed meats, limiting red meat
consumption to on average not
more than 2.5 oz./day (substitute
skinless chicken, turkey breast,
fish, and egg whites for animal
protein). Limit your exposure to
grilled meats. I hope this helps.
