Dear
Barb, an you
shed some light
on artificial
sweeteners
(and, by the
way, what's up with the different
column-photos of you the past few
weeks)?? Thanks, Elyse.

A

nswer: Dear Elyse, Arti-
ficial sweeteners are food
additives that attempt to
duplicate the effects of sugar in
taste, but with less calories. Typi-
cally, this is achieved via increased
"intensity" of the sweetness factor;
hence, they are often referred to as
"high intensity" sweeteners.

In the United States, five
artificially derived sugar
substitutes are currently
approved by the FDA for
use. They are saccharin
(Sweet 'n Low), as-
• partame (Nutrasweet),
sucralose (Splenda),
st )
\l' neotame (Neotame) and
acesulfame potassium
(Sunett, Sweet and Safe,
or Sweet One).

I'll have much more on
artificial sweeteners next time.

OK, what's up with the different
pictures lately, you (and others)
ask? The truth: multiple person-
alities (just kidding). Actually,
it's a long, semi-sad story involv-
ing outdated photos, the column
switching to color, and trying to
get by with existing photos in an
effort to avoid sitting still for a new
one. Let's just say (hopefully) I
won't be changing my photo again
anytime soon.
