1 t. kosher salt, or to taste
1/2 t. ground black pepper or to taste
vegetable oil for frying
Cut potatoes into small chunks and,
using a hand grater or a food processor
fitted with a shredding disk, grate the
potatoes. Transfer potatoes to a large
colander and allow the shreds to
become dark. Rinse off the potatoes
well, moving them around with your
hands until they are white again.
Use your hands to press as much
liquid from the potatoes as possible
(the drier the better). Transfer the
potatoes to a bowl and stir in the
onions, eggs, salt and pepper.
Make a test latke: Heat 1/8-inch of
oil in a large non-stick skillet over
high heat until hot, but not smok-
ing. Working in batches, spoon a
heaping tablespoon of the mixture
into the hot oil, spreading the mix-
ture into a round shape with the
tines of a fork or the tips of two
spoons (do not press them with the
back of the spoon). Reduce heat to
medium and cook until bottoms are
golden, about 5 minutes.
Carefully turn the latke over with a
turner (you may need a spoon or fork
to push the latke onto the turner) and
cook until golden on the other side.
Transfer to a baking sheet lined with
several layers of paper towel to drain.
Taste the latke for seasoning.
Adjust salt and pepper to taste and
fry the remaining batter. Serve imme-
diately or keep latkes warm on the
paper towel-lined baking sheet in a
250F oven. Serve hot, with sour
cream and applesauce.

APRICOT GINGER CHICKEN
TENDERS
1 1/2 2 pounds chicken tenders or
boneless
1/2 cup, or more, all-purpose flour
1/4 cup (1/2 stick) butter
8 dried apricots, thinly sliced
2 large green onions, sliced
1 cup canned low-salt chicken broth
1 1/2 T. cornstarch
2 T. apricot preserves
1 T. honey
2 t. soy sauce
1 T. fresh mint ginger
Pound chicken breasts between
sheets of waxed paper to 1 /2-inch
thickness. Season with salt and pepper.
Dust with flour, shaking off excess.
Melt butter in heavy, large skillet
over medium-high heat. Add chicken
and saute until cooked through, about
4 minutes per side. Transfer chicken to
platter. Tent with foil to keep warm.
Add apricots and half of green
onions to drippings in same skillet and
stir over medium-high heat 1 minute,
scraping up any browned bits.
Mix broth and cornstarch in small
bowl until smooth. Add to skillet;
bring to boil, stirring constantly. Add
preserves, honey, soy sauce and ginger.
Boil until thickened to sauce consis-
tency, about 2 minutes. Pour over
chicken. Garnish with remaining
green onions. Makes 8 servings. I I
