meatball ingredients in a large bowl
and use your hands to mix well. Shape
mixture into 1-inch balls with wet
hands. Arrange the meatballs on a
baking sheet with sides and bake for
10-12 minutes, until the meatballs
have given up most of their fat.
Remove from oven and transfer the
meatballs to the sauce. Raise heat,
bring the mixture to a boil again,
reduce heat and simmer the meatballs
for one hour. Keep hot until ready to
serve. Makes 8 servings, or if more
served with other appetizers.

FRUIT-AND-NUT
TURKEY SALAD
For variety, add 2 tablespoons curry
powder to the salad. Or to stretch the
salad to serve more people, add 4 cups
cooked wild rice and 1/4 cup red wine
to the salad.
6 cups chopped cooked turkey
1 cup mayonnaise
juice of 1 lemon
1 cup chopped scallions
1 1/2 cup chopped walnuts or
pecans, lightly toasted
1 1/2 cups chopped celery
1 cup dried cherries, cranberries,
golden raisins or combination of
these
1/2 cup fresh chopped parsley or 2 T.
dried parsley flakes
salt and pepper to taste
Combine all ingredients in a large
bowl and mix well. Chill until ready
to serve. Makes 8 large servings.

SWEET POTATO PANCAKES
You may also make these with mashed
potatoes or winter squash, though you
may need to adjust the amount of
breadcrumbs.
4 cups mashed sweet potatoes
1/2 cup minced onion
1/2 cup breadcrumbs
2 eggs
salt and pepper to taste
vegetable oil for frying
Combine all the ingredients except
oil in a large bowl and stir well.
Heat oil in a large, non-stick skillet
over medium-high heat. Use your
hands to form the sweet potato mix-
ture into 3-inch diameter, 1/4-inch
high pancakes. Gently transfer the
cakes to hot oil and fry on both sides
until lightly colored. As they're cooked,
transfer the pancakes to a pan lined
with several layers of paper towel to
drain. Makes about 16-20 pancakes. ❑
