The Chicken Marsala is another win-
ner ... two six-ounce chicken breasts
sauteed with mushrooms, onions and
garlic, served in Marsala wine sauce
($9.95) ... And one would be hard-
pressed to find a better Filet Mignon or
New York Sirloin for the price ($14.95)
... Shrimp Chardonnay with fresh
bacil, cream, OP rArmnay wine
tomatoes ($13.95) ... The Shrimp
Dijon with lemon butter, garlic,
onions, tomatoes and Dijon mustard is
prepared with a dry sec sherry ($13.95)
... Shrimp Bordelaise sauteed with gar-
lic and Bordelaise sauce ($12.95) ... All
are served over rice.
When it comes to elegant cuisine,
George is no slouch ... Back in the
1970s, he was one of the fine waiters
at London Chop House before
becoming the tableside cooking maitre
d' at the four-star Benchmark.
Even for lunch, Giorgio's Gourmet
Diner has added many of his gourmet
delights ... Steak Diane ($8.95), Steak
au Poivre ($8.95), Filet Mignon
($8.95), Spaghetti Bolognese ($7.95),
12-14 ounce Whitefish ($9.95),
Shrimp Scampi ($8.95), Chicken
Morengo ($7.95), etc. ... And one of
the sandwiches at lunch, that plain ol'
American favorite ... the hamburger
... is given a fancy dress with Chutney
(Indian mango), Dijon mustard and
Bordelaise sauce ... served open face
($5.50). He calls it a Giorgio Burger.
How can George sell his gourmet
food so inexpensively at dinner and
lunch while still using the highest
quality food available ... and not cut-
ting corners on service?
Like this ... Cut his own meat ...
No linen tablecloths ... No linen nap-
kins ... No placemats ... No fancy
frills ... Overhead kept to a bare mini-
mum without unnecessary add-ons ...
Have people like Eddie Hanna at
lunch and dinner and Audrey Gorelick
at lunch ... both of whom can cook
food faster than two people ... Bus
tables and the counter themselves as
needed ... help cook and do whatever
necessary.
