for transporting. Think about what
else you may own that has wheels or
would double as a picnic helper.

ALL'S FARE
The answer to what makes good
picnic fare is easy. Really just about
anything you eat indoors can be eaten
outdoors ... within reason. Grilled
chicken is a yes. Chicken with a frag-
ile, spoilable sauce, no. Mixed grain,
potato or pasta salads are a go. Baby
or butter lettuce salad with a creamy
dressing that can wilt in the sun is a
no-no. So while your food choices are
virtually unlimited, certain food
preparation styles may not be appro-
priate for outdoor eating.
For some picnic food ideas, there
are a multitude of books and internee
materials that specialize in picnic fare.
Authors Katja Goldman and Arthur
Boehm have taken poultry to a new
level in their book. The Empire Kosher
Chicken Cookbook ($25.00, Clarkston
Potter Publishers, New York) offers
recipes not just for chicken, but for
all types of Kosher poultry, vegetarian
salads and side dishes. Recipes such as
Rosemary Chicken with Vegetables
and Tomato Cumin Sauce, Grilled
Chicken with Melon Salsa and
Tender Greens, and Summer Corn
and Cucumber Salad make for perfect
packing.

Serving style and presentation can
make all the difference in terms of
mood and how tasty your food will
