customers ... The regular menu is
available ... but Shangri-La's delicious
Dim Sum (literally meaning "to lavish
the heart") are snacks of freshly-
steamed or fried Chinese "canapes" ...
These remarkably diverse examples of
culinary innovation (and engineering)
feature many different ingredients.
The Dim Sum baskets or plates are
inexpensive, enabling folks to enjoy a
diverse and speedy meal ... Shangri-La
chefs are highly regarded specialists ...
Their artistry and ingenuity is
astounding, for some Dim Sum dishes
seem to defy all the laws of physics
and gravity.
Even the standard shrimp cium -pling
(hat gau) is a minor culinary miracle
with a wafer-thin rice flour wrapping
cloaking a baby shrimp and some
minced meat ... The skin of rice flour
is so transparent that the ingredients
can be clearly seen ... Soup dumplings
are another marvel of culinary engi-
neering in which a portion of soup is
magically sealed inside a sheer skin,
and steamed without a drop of leak-
age.
Although rice flour is a favorite
wrapping for Dim Sum's tasty "small
chow" snacks of mixed meats and veg-
etables, pure vegetable alternatives at
Shangri-La have enthusiastic fans ...
Try some of the beancurd rolls (chuk)
...Or the firm, flavor-filled, deep-fried
taro vegetable puffs (woo kok).
Although Shangri-La, or any other
restaurant for that matter, doesn't serve
them all, there are around 2,000 vari-
eties of Dim Sum ... Larger, specialty
Dim Sum restaurants usually prepare
up to 100 of them on any one day ...
At Shangri-La, the selection is about
50 ... including favorites like shrimp
dumplings (hat gau) or real spring
rolls (tsun quen), etc.
Shangri-La is colorful both in an
exquisite decor ... and its selection of
foods ... seven days a week, 11 a.m. to
2 a.m. ... So many items include the
large factors of both health and taste
... Even plain peapod leaves ... not a
