STUFFING

The golden challah gives this side dish
a buttery flavor. Put it in a bird and
it's stuffing; put it in a baking dish
and it's dressing. Make it any way you
want. Feel like being fancy, add wild
mushrooms, water chestnuts, toasted
pecans, fresh rosemary, dried fruit —
whatever you desire — to make this
your signature stuffing.
2 lbs. sliced challah toast, crusts
removed and crumbled
2 c. chopped celery
2 c. chopped onions
1 c. chopped parsley
2 c. sliced fresh shiitake or button
mushrooms
4 T. poultry seasoning (available in
the spice aisle)
2-3 c. hot chicken or vegetable
broth
2 eggs
salt and pepper to taste

Preheat oven to 325F. Spray a large
baking dish (or disposable aluminum
pan) with nonstick cooking spray.
Place challah, celery, onions, parsley,
mushrooms, and 2 T. of the seasoning
in a large bowl and toss well to corn-
bine. Pour the chicken broth over the
stuffing and toss again.
Stir in the eggs until combined.
Spray the dull side of a large length of
aluminum foil with nonstick cooking
spray and cover the pan. Bake for 1
hour, stir the stuffing with a large
spoon, adjust seasonings (adding more
poultry spice if needed and salt and
pepper), and bake another 30 min-
utes, uncovered. Keep covered and
warm until ready to serve. ❑
