layers of cheesecloth, slightly damp,
over sink. Pour curdled milk over.
Collect remaining solids and tie into a
bundle inside the cheesecloth. Place
atop a bowl (you can do this by tying
cheesecloth to a long stick to reach
across the bowl), making certain it has
plenty of room to drip. Refrigerate and
allow to drain up to 24 hours.

Try their remedy for a sore throat:

milk" is indeed just that (can you
imagine the kinds of lawsuits that
would ensue if American consumers
discovered they were actually drinking
donkey milk?). Certainly years ago,
however, in Eastern Europe (and still
in some places there today) you could-
n't be sure what was in your milk (not
to mention your food), so chalav
Yisrael made a great deal of sense.
