ular ... handling great flaming dishes
with an imperious disdain that would

emphasis was more and more on he
sophisticated dishes from the Italian
Peninsula.
Some of these, prepared under the
watchful eye of Arminio, were the
Petro di polio Bolognese, the filet
mignon, scampi saute Arminio and a
host of less exacting dishes.
Maria's had been in business 11 years
before it added a new dining room and
cocktail bar ... The bar was small and
located up near the entrance where all
good bars should be situated.
The lighting was soft and sounds well
muffled ... The whole effect was con-
ducive to relaxed dining and intimate

Motor Bar Steak House in the
Sheraton-Cadillac Hotel on
Washington Blvd. in Detroit ...
Women young and old came to eat ...
And no one could dispute that they
were or weren't mothers ... Its manager
said that it should have read, "Moms
eat free with purchase of a second din-
ner ... And it cost them plenty ...
Motor Bar Steak House was patterned
after an old English inn At night,
there was a more than ample salad bar
and a strolling cart from which flaming
dishes were prepared at your table.
PIZZA AND PASTA places were
galore ... Before World War II, the
pizzeria was a well-kept neighborhood
secret and only a few outsiders had any
idea of the glories of the tomato pie.
Then in the late 1940s there was a
pizza explosion and the streets be - ame
littered with pseudo-Roman chain out-
lets dishing up sogg.,, cheap imitations
of the real thing.
The net effect was to ruin the good
name of the tastiest, most satisfying all-
in-one meal invented by man ... In a
way it was very funny ... since the
sources of true pizza continued as
neighborhood secrets.
