roasted chicken, apples, walnuts and
dried cherries ... tossed in a marsala
cream sauce, topped with Parmesan
cheese is a first choice for many.
When Greg came to Too Chez eight
years ago, it didn't make its own
bread, which was then bought outside
... Three years later, Too Chez had a
bakery on the premises, making its
own homemade bread (200,000
loaves) and homemade pastries ... The
last two years, Greg has also done
much of his cooking using distilled
bottled water.
What customers don't read or see is
the backdrop of healthy cooking in
which Greg specializes ... The menu is
designed around "The Zone" ... a
combination of proteins, carbohy-
drates and mono-saturated far to set
off a hormonal balance.
Recently placing second in the state
as a triathlon athlete, he knows his
healthy foods .... All grains, flour, miso
(7800 pounds) and tofu (7800 pounds)
are organic ... and his cooking is done
in olive oil (6,300 gallons) ... If other
than olive oil is wanted, Greg will use
corn oil or walnut oil on request.
Before Too Chez, Greg was execu-
tive chef at Cousin's Heritage Inn in
Dexter, Mich., outside of Ann Arbor,
where many doctors would come to
have him cook for them and discuss
food and diet.
But don't ever mistake Too Chez as
a health-food restaurant ... It's far from
it ... Rather, Too Chez can be consid-
ered among the top all-around spots
for informal dining.
It is admirable that there is a strong
emphasis on the freshness and variety
of ingredients ... and on less fussy,
though no less sophisticated, dishes ...
The clearly detectable influence of
lighter sauces and cleaner-tasting and
less rich food at Too Chez are big
pluses to go along with its choice
selections.
THEY USED TO call him "Baby
Face" ... Even after his first job as a
17-year-old in 1 948 when Billy Rose
played after hours, 2 a.m. to 5 a.m. ...
at Giovanni's Restaurant on Temple
off Woodward in Detroit ... Billy had
such a young-looking face that manag-
er Jimmy Sero and host Turk
Prujansky used to paint a mustache on
him every night with a matchstick.
