CURRIED TUNA AND GRAPE
SALAD SANDWICH
8 ounces drained canned water-
packed white tuna, flaked
1/2 cup coarsely chopped celery
1/2 cup diced yellow or red bell
pepper
1/4 cup minced scallions
1/4 cup plain nonfat yogurt
2 tablespoons reduced-calorie
mayonnaise
1 teaspoon mild or hot curry
powder
20 small or 12 large seedless red
grapes, halved
4 two-ounce hard crusty rolls
1/2 cup packed, well-washed
spinach leaves
In a medium bowl, combine tuna,
celery, bell pepper, scallions, yogurt,
mayonnaise, and curry powder; stir in
grapes.
With a serrated knife, cut a thin
slice off the top of each roll; set the
roll tops aside. Remove and discard 1
ounce of soft bread from the center of
each roll. Line inside of rolls with
spinach, allowing ends of leaves to
extend outside the rolls; top each por-
tion of spinach with one-fourth of the
tuna mixture, then one reserved roll
top. Makes 4 servings.
Per Serving: 215 calories, 5 g total
fat, 1 g saturated fat, 27 mg choles-
terol, 451 mg sodium, 23 g total car-
bohydrates, 2 g dietary fiber, 20 g
protein, 82 mg calcium.
