by rising to the top and the starch
will be on the bottom of the bowl.
Pour water out and use starch in

meal, salt pepper and reserved potato
starch. Mix well.
In a cast iron skillet over medium
heat, heat vegetable oil. Oil should be
about 1 inch deep.
Form 1/4 c. potato mixture into
pancakes and slide gently into oil. Let
cook for 6-8 minutes or until golden

SWEET POTATO LATICES
MAKES 16 PANCAKES
2 large eggs, beaten
1 T. dark brown sugar
1 t. apple pie spice
1 t. kosher salt
1/2 t. black pepper
4 1/2 c. shredded sweet potatoes
(approximately 2 large potatoes)
1/2 c. matza meal
Vegetable oil for frying
In a food processor fitted with a
steel blade, puree the eggs, brown
sugar, apple pie spice, salt and pep-
per until smooth. Add 2 cups shred-
ded sweet potatoes and matza meal,
and pulse-puree for 15-20
seconds.
Transfer mixture to a
medium size bowl. Stir in
remaining sweet potatoes.
In a large cast-iron skil-
let over medium-high heat,
heat the oil. Oil should be
about 1" deep.
Form 1/4 cup potato
mixture into pancakes and
slide gently into oil. Let
cook for 6-8 minutes or

Suggestions:
• Latkes can be portioned with an
ice-cream scoop and then flattened
out when they are in the pan.
• These make large latkes, but this
batter is perfect for mini-potato
latkes, too.
• Latkes freeze beautifully. Cook
according to recipes, cool and freeze.
Reheat at 400 for 10-12 min. or until
heated through.
1/2 c. butter or margarine,
softened
1/4 c. sugar
1 1/4 c. flour
Food coloring
Preheat oven to 300°
Cream sugar and butter together.
Add flour and mix well.
Divide into 3 or 4 equal parts,
adding different colored food color-
ing to each part.
Form the dreidel shapes by hand,
using a straight edge like a knife. To
form the "top," use a wood skewer,
cut into short pieces and cover with
colored dough.
Chill cookies or at least 30 min-
utes. Bake for about 25 minutes. Fl
