community.
All recipes in the book are kosher
and identified as suitable for dairy or
parve meals. In the introduction,
Servi-Machlin explains where special
ingredients might be found. Indexes
include dairy and parve listings and
list typical holiday desserts. She also
provides interesting commentary
about each recipe.

"Pizza Romana" ("Jewish Fruit Bars")
is an ancient dessert created and used
by the Roman Jews for family celebra-
tions such as b'nai mitzvah? It is avail-
able commercially today only in the
Jewish bakery in the Roman Ghetto,
where people from every part of Italy's
capital city go to buy it.
The author, born in Pitigliano, Italy,
in 1926, lived in the town her ances-
tors had occupied for centuries until
World War II, which she survived as a
partisan in the hills of Tuscany. She
settled in America in 1958.

University Musical Society, based in
Ann Arbor.

Perlman's "Bean Sprout Salad with
Ginger," Evgeny Kissin's "Mushroom
Soup," Joshua Bell's "Avi Eggs" and
Martin Katz's "Risotto all'erbe" — as
well as from acclaimed chefs and
some of the region's best cooks.
The book is structured around 13
legendary UMS performances, one
for every major recipe category. It
also includes fond memories of cele-
brated artists, anecdotes from long-
time UMS concert goers, beautiful
photos of the University of Michigan
campus and sidebars about American
cuisine over the past century..

mances and educational programs.
