1 t. or more Chinese hot sauce
to taste
Sesame seed oil to taste

Use homemade or canned chick-
en broth. Add to the broth the
chicken, softened and sliced
mushrooms, tofu and bamboo
shoots. You can use more or less
of the chicken and tofu if you
like. Season with the vinegar and
soy sauces and bring the mixture
to a boil.
Mix the cornstarch with a bit
of cold water to make into a
paste and whisk into the hot
soup to thicken slightly. Fork
beat the eggs (or just use the
whites) and add and swirl and
stir into the soup. Lastly, add the
hot oil to taste. Oriental Sesame
oil may also be added with the
hot oil for some extra flavor.
Serves 6.

VEGETABLE STRUDEL
(DAIRY OR PAREVE)
1/2 c. julienne carrots
1/2 c. julienne celery
1/2 c. julienne zucchini
1/2 c. julienne red and green
bell peppers
1 minced shallot
1 T. fresh thyme
1 T. fresh basil
3 T. oil
1/4 c. white wine
1/4 c. Boursin cheese/ light
cream cheese or pareve
cream cheese
Salt and pepper to taste
1 box phyllo dough
1/4 c. margarine (melted)

Saute the carrots, celery, zucchi-
ni, peppers, shallots, thyme and
basil in the 3 T. oil until the
vegetables are al dente. Add the
white wine, cook an additional
five minutes. Remove from
heat, add the cheese or pareve
cream cheese and mix thor-
oughly. Set aside to cool.
Take two sheets of phyllo
dough and using pastry brush,
brush with margarine. Cut
phyllo into 8 by 8-inch squares.
Place the vegetable mixture in
the bottom of the phyllo
square, fold over sides and roll
up. Brush outside of strudels
with margarine or oil. Bake on
rack on a sheet tray at 350 de-
grees for 15-18 minutes or until
golden brown. Makes eight fl-
inch strudels. n
