Heat oil in a large frying pan
and add mixture and stir until
brown. Remove from heat and
cool. Roll out the puff pastry to
a 11 by 15 sheet. Place meat
mixture along the long side of
the pastry and roll up, tucking
ends in. Place on an ungreased
cookie sheet. Can be prepared
up to this point and baked later.
Bake in a 425 oven for 12 to 15
minutes until nicely browned.
Cut into slices to serve and top
with the following sauce.

MUSHROOM SAUCE
2 T. margarine
2 T. flour
1 T. soy sauce
Sprinkle of dry onion soup
mix
1 c. water
2 T. white wine
1/2 lb. mushrooms, sliced

Melt the margarine in a
saucepan. Add the flour and mix
together until smooth. Add all
other ingredients except the
mushrooms. Heat and stir until
thickened. Add mushrooms.
Cook one minute and pour over
meat roll when serving.

CASHEW SALAD
1/3 c. sugar
1/3 c. vinegar
1 t. dry mustard
1 clove garlic, finely chopped
1 t. celery seed
Salt and freshly ground black
pepper to taste
Equal parts fresh raw spinach
and leaf
lettuce, enough to serve 6 to 8
1/2 c. whole or coarsely
chopped cashews or more
to taste

Combine the sugar, vinegar,
mustard, garlic, celery seed, salt,
and pepper in a bowl and whisk
until combined.
Toss the greens in the dress-
ing and place on individual serv-
ing plates. Sprinkle with the
cashews and serve
immediately. Serves 6 to 8.
