Combine all ingredients. Makes
enough marinade for 3 pounds of
meat or fish or 4 pounds of vegeta-
bles.
TIKKA MARINADE
This is based on an Indian recipe.
\ The turmeric in this marinade makes
It bright yellow, so the grilled food is
lovely to look at.
1/4 cup fresh lemon juice
1 t. kosher salt
1/3 cup plain yogurt
1 T. minced garlic
1 1/2 T. ground coriander
2 t. ground cumin
1 t. ground turmeric
A/2 t. ground ginger
1-2 t. hot red pepper sauce (such as
Tabasco)
Combine all ingredients. Makes
enough marinade for two pounds of
whatever -you're grilling.
CITRUS MARINADE
Like a burst of sunshine, this mari-
nade enhances the flavor of delicate
meats and fish. For variation, use all
one kind of zest and juice for a more
concentrated flavor.
1 T. grated lime zest
2 T. grated zest
1/2 cup orange juice
juice of 2 lemons
juice of 2 limes
2 T sugar (optional)
/2 cloves garlic, minced
1 T. red pepper sauce (such as
Tabasco)
1/4 cup melted butter or margarine
Whisk together the ingredients.
Makes enough marinade for two
pounds of meat or fish.
MEDITERRANEAN MARINADE
Olive oil, garlic, red wine vinegar,
'Oregano and wine give this marinade a
distinctly Mediterranean flavor. The big
surprise is that this marinade also works
as a marvelous vinaigrette for grilled
vegetables and salads of all kinds. Just
leave out the wine and adjust the
amount of garlic.
1 cup extra virgin olive oil
\ ,8-12 garlic cloves, minced
/'1 large onion, chopped
3 T. dried thyme (or 1/2 cup fresh)
2 T. dried oregano (or 1/4 cup fresh)
kosher salt to taste
freshly ground black pepper to taste
1/2 cup fresh lemon juice
1/4 cup red wine vinegar
2 cups dry white wine
Whisk together the ingredients.
Makes enough marinade for five
pounds of meat or fish.
RUM MARINADE
The rum adds a unique flavor to
foods. When they're grilled, foods
initially catch fire but the flames
subside quickly once the alcohol
burns off.
1/2 cup rum or tequila
1/2 cup brown sugar
1/4 cup soy sauce
1 T. fresh chopped ginger root
Combine all ingredients. Makes
enough marinade for 1 pound of meat
or fish.
SWEET AND PUNGENT
BARBECUE SAUCE
This is the red stuff that tastes so
good when it's brushed on during the
last 10-20 minutes of grilling.
1/2 cup A-1 Sauce
2 cups ketchup
1/2 cup brown sugar
1/4 cup honey
1 T. garlic minced
1 t. lemon juice
2 T. hot red pepper sauce (such as
Tabasco)
Blend all ingredients together.
10 HERB RUB
If you enjoy the flavors of fresh
summer herbs (who doesn't) then this
is a rub for you It makes the food
look speckled and vibrant and very
summery. Though you don't have to
use 10 different herbs, do use at least
five; otherwise the flavors are too
intense. I like to grill fresh salmon
with these herbs and serve them over a
bed of baby greens drizzled with a
simple vinaigrette. If you don't have
access to fresh herbs, don't make this
rub.
1/2 cup -extra virgin olive oil
1 T. kosher salt
i t. coarse ground black pepper
2 cups mixed, minced fresh herbs,
such as:
thyme
oregano
basil
parsley
chives
sage
tarragon
chervil
mint
lavender
Combine all ingredients in the bowl
of a food processor and pulse until a
paste is formed. Rub onto whatever
you're grilling. E
