I
is time for another one o
my confessions. I'm a
popcorn addict.
I can eat it for a
quick snack or when watching
a movie (nothing is better then eat-
ing popcorn while watching a
movie). If I'm feeling a little bit
decadent and not in the mood
for anything conventional, it's even
been dinner.
Actually, popcorn can be really
good for you. Low in calories and
high in fiber, it's truly a great snack if
you air pop it and don't pour on the
salt and butter.
Lately, I've been experimenting
with a few interesting recipes I
found on the back of a jar of Orville
Redenbacher's. I've discovered a
whole new world of what I like to
call "quasi-healthy junk food." These
are the kind of recipes you fool your-
self into thinking are good for you
because at least one of the ingredi-
ents is low in calories or high in
fiber. Of course, I'm not saying that
any of the following recipes are bad
for you; but anything that tastes this
good had to have just a few calories
attached to it.
CAJUN POPPED CORN
8 to 10 c. popped corn
1/4 c. butter or margarine, melted
1 t. chili powder
1/2 t. each: onion powder and
garlic powder
1/4 t. each: cayenne pepper and salt
1/8 t. seasoned or lemon pepper
In a small bowl, place 1 quart hot
popped corn; set aside. In a large
bowl, pour butter over remaining
popcorn. Combine remaining ingre-
dients. Sprinkle over buttered popped
corn, tossing gently to coat.
Spread on a 15x10-inch baking;
sheet and bake at 300 degrees for 3
minutes, or until desired crispness.
Mix in reserved popcorn. Serve
immediately or store in airtight con-
tainer. Makes 3 quarts.
PIZZA PIE POPCORN
6 to 7 c. popped corn
1/4 c. grated Parmesan cheese
1 1/2 T. dry Italian-style salad
dressing mix
1/2 t. oregano
3 T. each: butter and tomato
ketchup
In a large bowl, place hot popped
corn; set aside. In a small bowl, corn-
bine 2 T Parmesan cheese, dry salad
dressing mix and oregano.
In a small saucepan, melt butter
and ketchup; pour over popped corn, `-\
tossing gently to coat. Sprinkle dry
salad dressing mixture over popped
corn, tossing again to evenly coat all
pieces. Spread coated corn on a
15x10-inch baking sheet. Bake at 350
degrees for 5 minutes. Sprinkle
remaining Parmesan cheese over
baked corn, let cool 5 minutes. Serve
immediately or store in airtight con- c7:\
tainer. Makes 3 quarts.
TEX-MEX MIX
8 to 10 c. popped corn
4 c. slightly crushed tortilla chips
2 (2.8 oz.) cans French fried onions
1/4 c. butter, melted
1 (1.25 oz.) package dry taco
seasoning mix
In a large bowl, combine hot popped
corn with tortilla chips and onions;
set aside.
In a medium saucepan, melt butter
with half the packet of taco mix; pour
over popcorn mixture, tossing gently
to coat. Spread on a 15x10-inch bak-
ing sheet. Bake at 350 degrees for 3-5
