INDIAN-STYLE COUSCOUS
(MEAT)
2 1/4 cups chicken broth
2 tablespoons oil
1 (10-ounce) package couscous
1 tablespoon curry powder
2 tablespoons brown sugar
1/2 cup chopped dates
1/2 cup chopped fresh cilantro or
parsley
fresh ground pepper to taste
In a medium saucepan, bring the
chicken broth to a boil over high
heat. Remove from heat. Stir in the
oil, couscous, curry powder and
brown sugar and cover tightly. Let
stand for 5 minutes. Do not peek.
Uncover. Stir in dates and cilantro
or parsley. Season to taste with pep-
per. Serves 4-6.

BULGUR PILAF (PARVE)
1 cup bulgur wheat
3/4 cup thinly sliced scallions
2 tomatoes, cut in thin wedges
1 cup chopped roasted yellow or
red bell peppers
1/4 cup raisins
2 tablespoons olive oil
2 teaspoons cumin or to taste
salt and pepper
Measure the bulgur into a large
heatproof bowl. Cover with boiling
water to come about 1-inch above
the bulgur. Let stand 15 minutes or
until most of the water is absorbed
and bulgur is softened but still
chewy'. Drain well. Stir in scallions,
tomatoes, peppers, raisins, olive oil
and cumin. Season to taste with salt
and pepper. Serve hot with sliced
brisket or roast beef. Serves 4-6.
