cucumbers, peeled and seeded
1/2 cup lowfat sour cream
2 Tbsp. olive oil
3 Tbsp. fresh chopped dill
3 Tbsp. white vinegar
1 tsp. sugar
1 tsp. kosher salt
1/2 tsp. black pepper
1 tsp. celery seed
Slice the cucumber into thin slices,
to make small crescents. Toss lightly
with remaining ingredients and serve
at once as a salad or accompaniment
to just about anything.
You can make this salad up to two
days ahead of time and stir it and
adjust the seasonings just before you
serve it.

TOMATO, CUCUMBER,
GORGONZOLA SALAD
Tomatoes and cucumbers are plen-
tiful through the beginning of
September.
Here's a version of that favorite
Caprese salad of tomatoes and fresh
Mozzarella cheese. For variety, change
cheeses, add some chopped nuts or
sunflower seeds or serve this salad on a
bed of greens.
6 ripe tomatoes
1 large cucumber sliced thin
1 cup, or more, garbanzo beans or
chick peas, drained and rinsed
1/2 cup, or more, shaved Bermuda
onion
2-3 ounces Gorgonzola, Roquefort
or other crumbly bleu cheese
2 Tbsp. capers, drained
1/4 cup fresh chopped parsley
1/4 cup red wine vinegar
1/4 cup extra-virgin olive oil
kosher salt and fresh ground pepper
to taste
Slice tomatoes thin and arrange
around a platter. Slice cucumbers very
thin and arrange between the tomato
slices. Sprinkle the garbanzo beans,
cheese, capers and parsley over the
salad. Drizzle vinegar and olive oil
over the salad and season to taste with
salt and pepper.
SUMMER TOMATO AND
MELON SOUP
Don't be afraid of the name of
this soup. It's a favorite recipe adapt- (:)—;
ed from The Silver Palate Cookbook.
It's actually much like a lighter ve r-
sion of gazpacho. Serve the soup in
small glass mugs or wine glasses or
in pretty shallow bowls as a first
course.
