Here's a version of that favorite Caprese salad of tomatoes and fresh Mozzarella cheese. For variety, change cheeses, add some chopped nuts or sunflower seeds or serve this salad on a bed of greens. 6 ripe tomatoes 1 large cucumber sliced thin 1 cup, or more, garbanzo beans or chick peas, drained and rinsed 1/2 cup, or more, shaved Bermuda onion 2-3 ounces Gorgonzola, Roquefort or other crumbly bleu cheese 2 Tbsp. capers, drained 1/4 cup fresh chopped parsley 1/4 cup red wine vinegar 1/4 cup extra-virgin olive oil kosher salt and fresh ground pepper to taste Slice tomatoes thin and arrange around a platter.
