HOT 'N SPICY BBQ SAUCE
1 cup ketchup
2 tablespoons lemon juice
1 teaspoon cinnamon
1 teaspoon hot pepper sauce
1/2 -1 teaspoon crushed red pepper

Combine all the ingredients in a
saucepan and simmer until thorough-
ly heated. Use as a "mop" for meat on
the grill Reconimended for: beef ribs.

PINEAPPLE BBQ GLAZE
3 oz. pineapple juice, frozen
concentrate
1/4 cup orange marmalade
2 tablespoons steak sauce

In a bowl combine the ingredients
and stir until thoroughly mixed.
Glaze the grilling meat with this dur-
ing its last 10 minutes of cooking.
Recommended for: chicken.

FAJITA MARINADE
Marinate the steak overnight in the
following mixture.
1/4 cup lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
1/2 teaspoon cumin
1/4 cup corn oil

Combine all the ingredients in a
9X13 dish and mix well. Place the
meat in the marinade, turn after 1/ 2
hour. Cover and refrigerate overnight.
Bring the meat to -room temperature,
salt and pepper, heat the grill to 500
degrees and toss on the steak. While
cooking baste the meat regularly; turn
the meat when it releases from the
grill.
Continue cooking until the meat is
medium rare. Also grill sliced sweet
and hot peppers and onions. Slice
steak very thinly across the grain and
serve with grilled peppers. 1]
