You must work quickly when you toss
bread cubes with oil. Bread is like a
sponge and you don't want to soak it
in the oil, just toss it lightly. Each lit-
tle hunk of bread is lightly toasted
and flavorful. Eat these as bread or as
croutons over your favorite green
salad or soup.

Extra virgin olive oil
Minced garlic
Kosher salt
Herbs such as oregano, parsley,
mint, etc.
Crumbled or shredded cheese, such
as Bleu, Parmesan or goat,
optional
Hearty, heavy bread, any flavor, cut
into 1 1/2 - 2-inch chunks

Start with 1/4 cup oil. Add about 1
tsp. minced garlic, 1 tsp. Kosher salt
and 1-2 tsp. herbs and 2 Tbsp.
cheese. Toss a couple of handfuls of •\_\
bread in the mixture and remove
them quickly to a cookie sheet. Do
not worry if not all the bread is coat-
ed and if the herbs and garlic don't
seem to be sticking to the bread.
Repeat the process, adding more oil
and herbs as necessary, until you have
as many cubes as you like.
