3/4 cup orange juice
1/4 cup red wine vinegar
1/4 cup olive oil
1/4 cup honey
2 T fresh sage leaves or 2 tsp. dried
sage
1 tsp. Kosher salt
1/2 tsp. ground black pepper
3 bay leaves
2 pounds boneless and skinless
duck breasts, partially frozen

Combine marinade ingredients in a
glass or plastic bowl. Set aside. Cut
partially frozen duck meat into 1 - 1
1/2-inch cubes and place in the mari-
nade. Cover with plastic wrap and
chill the meat in the marinade for 2
hours up to overnight, turning occa-
sionally.
Heat a barbecue or grill to medi-
um hot. Drain the duck well and
thread on 10-12, 10-inch skewers,
alternating meat with bell peppers.
Place skewers on a preheated medi-
um-hot grill and cook for about 8-12
minutes, turning often, to desired
doneness. Serves 6 - 8.

Toss vegetables very lightly with oil
and fresh herbs. Thread vegetables on
skewers, all one kind or mixed, and
cook on a preheated medium heat
until the vegetables are to your liking.
For hard vegetables, such as carrots,
potatoes and beets, to name a few, it's
best to place the vegetables on medi-
um-low heat and cook for longer
periods of time, turning occasionally,
until done. Do not partially cook
vegetables before grilling; it changes
their texture.
