EASY POTATO AND
SPINACH MINA
8 sheets matzah
3 medium potatoes, peeled, cooked
and mashed
1/2 cup cheese, shredded (Swiss or
cheddar work well)
1/4 cup feta cheese, finely crumbled
1 cup lowfat cottage cheese
1 10-oz. package frozen chopped
spinach, defrosted and squeezed of
excess moisture
3 large eggs
Salt and pepper to taste
Pinch of nutmeg
2 Tbsp. vegetable oil
1 beaten egg for brushing over mina

Soak matzah in warm water for 3-4
minutes or until softened. Carefully
drain water and squeeze slightly to
remove moisture.
- Place potatoes, cheeses, spinach, eggs,
pepper and nutmeg in a large bowl and
mix until combined. Season well,
because the matzah has very little flavor.
Crumble matzah into a 9 x 12 glass or
ceramic baking dish that's been spread
with 1 Tbsp. oil. Gently place or spread
the filling over the matzah to the edges.
Top with remaining crumbled matzah.
Chill for one hour. Spread remaining oil
over the top of the mina. Brush egg over
the top of mina. Bake in a preheated
350-degree oven for 1 hour. Let cool
slightly and cut like a kugel and serve
warm or at room temperature as a side
dish. Serves 12.

In a large skillet over medium-high heat,
heat oil until hot, saute the onion and
celery until softened. Add sugar and
continue cooking until vegetables are
very caramelized or golden. It is essential
that the onion be well browned to give
the chopped liver good flavor. Remove
the vegetables from the skillet and place
in the bowl of a food processor or
blender to cool. Add walnuts to the skil-
let and saute, stirring constantly, until
lightly toasted. Let cool slightly. Add
nuts, eggs and seasonings to the food
processor and process until smooth.
Adjust seasonings and chill. Serve with
cut vegetables or matzah tams. El
