pan and place the brisket over them).
Cover tightly with foil and bake for 2
1/2 hours. Turn off the oven but leave
the brisket in for another hour. Remove
meat from pan, cool and chill for sever-
al hours or overnight. Place remaining
sauce in the pitcher of a blender and
blend sauce until smooth. r\—/
While still cold, slice the meat into
thin slices against the grain. Put back in
a clean baking pan. Pour the blended
sauce over the meat and reheat at 250
for up to 2 hours and serve hot. A 5-
pound brisket will serve 8-10.

CITRUS POTATO STARCH
SPONGE CAKE
8 eggs, divided
1 1/2 cups sugar, sifted

1/4 cup lemon or orange juice
1 Tbsp. grated lemon or orange peel
3/4 cup potato starch, sifted
1/4 tsp. salt

Preheat oven to 350. Place the yolks
in a large bowl and beat with an elec-
tric mixer until creamy, about 2 min-
utes. Add the juice and sugar and peel
and mix until well combined. Add the
starch, gradually, mixing continuously
for 2 minutes more. Set aside.
Place egg whites in a clean dry bowl.
Add salt and, with clean, dry beaters,
beat the whites until very stiff Gently
fold the beaten whites into the yolk
mixture. Don't worry if there is still a
little white showing. Pour the cake bat-
ter into a non-greased tube pan. Bake
for 1 hour, or until the cake is golden.
Invert the pan onto the neck of a large-
mouthed jar or bottle to cool. When
completely cool, very gently run a knife
all the way around the outside and
inside edges of the pan and loosen the
cake slowly from the pan onto a serv-
ing plate. Sprinkle generously with
powdered sugar and serve with fresh
fruit or chocolate sauce. Serves 12.

MERINGUE KISSES

3 egg whites
1/2 cup confectioners sugar

Heat oven to 250. Place a sheet of
waxed paper or parchment on a cookie
sheet and set aside until ready to use.
Place egg whites in a clean, dry
bowl. Beat whites until soft peaks form.
Slowly add sugar and continue beating
until the egg whites are stiff and shiny.
Spoon the meringue onto the prepared
cookie sheet in small spoonfuls. Bake
for 1 hour or until the meringues are
firm to the touch. Turn off heat and let
cool completely in the oven. Makes 18-
24 kisses.
