BRITISH CHIPS (PAREVE)
These are best (and most safely) made
in a deep-fat fryer equipped with a
wire basket. If you don't have a deep-
fat fryer, use a deep, heavy saucepan.
Fill one-third full of oil and heat as
described below. Watch carefully.

Cut the potatoes into 1/2-inch wide
slices, then crosswise 1/2-inch wide
to resemble chunky french fries. Soak
in a pan of cold water to removes
- excess starch. Drain and dry thor-
oughly with paper towels or clean,
dry tea towel.
Pour enough oil in a deep-fat fryer
to come halfway up the sides. Heat
the oil to 375F or until a bread cube
browns in 30 seconds. Place the pota-
toes in the wire basket, lower into the
hot oil and cook 3-4 minutes until a
knife slides in easily when pierced. Lift
the basket from the oil allowing any
excess oil to drip back into the fryer.
Bring the oil back to 375F. Lower bas-
ket with potatoes back into the hot oil
and cook 1 minute longer until gold-
en and crisp on the outside. Drain on
paper towels. To serve: sprinkle lightly
with salt, pepper and vinegar to taste.
Serves 4-6.

Preheat broiler. Spray a broiling pan
with non-stick vegetable spray. In a
small bowl, mix olive oil, lemon juice
and garlic. Place halibut steaks on pre-
pared pan. Brush generously with the
oil mixture.
Cook 4 inches from preheated
broiler, 5 to 8 minutes until bubbly.
Turn and brush with remaining mix-
ture. Cook 5 to 8 minutes longer
