Drain artichokes. Chop coarsely. Mix
with plum tomatoes and set aside.
Spread focaccia thinly with butter.
This prevents sogginess. Spoon half
the artichoke mixture over one slice
focaccia. Top with second slice focac-
cia and press lightly. Cut into three
pieces.
Repeat with remaining ingredients.
Makes 6 sandwiches.
until pie shell is lightly browned.
In a bowl, beat together egg and
remaining sugar. Whisk in warm
cream and vanilla; pour over plums.
If necessary, cover edge of pie shell
with foil to prevent browning.
Return to oven and bake 20 to 25
minutes or until custard is set. Serve
warm or chilled. Makes 8-10 serv-
ings.
SCONES WITH
PAPAYA AND
PASSION
FRUIT (DAIRY)
6 tablespoons
butter
1 3/4 cups all-
purpose flour
2 tablespoons sugar
2 1/2 teaspoons
baking powder
2 tablespoons passion fruit,
mashed
1/4 cup diced papaya
2 eggs, beaten
about 1/3 cup milk
MELON AND PORT SORBET
(DAIRY OR PAREVE)
1/4 cup sugar
1/4 cup water
1 1/2 cups pureed ripe cantaloupe
1/4 cup port
4 store-bought chocolate
cups, 1 1/2 to 2 inches
diameter (optional)
Spray a baking sheet with non-stick
vegetable spray. Rub butter into flour
until mixture resembles coarse bread-
crumbs. Stir in sugar and baking
powder. Make a well in center and
add mashed passion fruit, papaya,
eggs and enough milk to make a
soft dough.
On a floured board, knead into
a ball. Roll out approximately 1/2-
inch thick. Cut into 2-inch
rounds with a cookie cutter and
place on prepared baking sheet.
Let rest 20 minutes. Preheat oven to
375 F. Bake 15 minutes until risen
and golden. Makes 8-10.
PLUM AND ALMOND TART
(DAIRY)
3 tablespoons ground almonds
1/2 cup sugar
2 tablespoons flour
1 (10-inch) pie shell
3/4-pound red or purple plums,
quartered
1 egg
1/3 cup light cream,
warmed
1/4 teaspoon vanilla
extract
Preheat oven to 400F. Stir
together almonds, two
tablespoons of sugar and the
flour; sprinkle over bottom of pie
shell. Arrange plums on top; sprinkle
with 2 tablespoons sugar. Bake in
preheated oven for 20 minutes or
In medium saucepan, mix
sugar and water to dissolve.
Bring to boil. Add pureed
melon and remove from heat. Cool.
Stir in port. Pour into shallow bowl,
cover and freeze two hours or until
crystals form on surface and at sides
of bowl.
Remove from freezer, stir and
whip until frothy, about two min-
utes. Cover and return to freezer
until firm, about four hours or
overnight. Spoon into chocolate
cups, small glasses or demitasse cups.
